Hawaii\u2019s food culture, like the island itself, is rooted in deep tradition and blooming with colorful and diverse dishes from innovative chefs. Allen Hess, who will re-invent Kings\u2019 Grille in Waikoloa Beach Resort, has made it his culinary mission to take fresh-raised foods from local farmers, ranchers and fishermen, and prepare them with state-of-the-art skills.<\/p>\n
The Kings\u2019 Grille will close for two weeks for renovation, September 19-October 4. Mai Grille will open on October 5, serving breakfast and lunch daily, from its scenic location overlooking the Kings\u2019 Course. Dinner menus are in development so stay tuned for more exciting news which will be coming soon.<\/p>\n
Chef Allen has made it his culinary mission to take fresh-raised foods from local farmers, ranchers and fishermen, and prepare them with state-of-the-art skills. Hess has said there\u2019s a story behind each of his ingredients, and he personally knows the people who provide the food, from fresh-caught \u2018Ahi to local Zucchini. His new restaurant, Mai Grille, will feature Hess\u2019s well-known, \u201cslow foods\u201d style of regional cooking, from CanoeHouse, his own bistro Allen\u2019s Table, and Merriman\u2019s in Waimea.<\/p>\n
\u201cWe are very fortunate to have Chef Allen join our \u2018ohana,\u201d said Scott Head, Vice-President of Resort Operations. \u201cOur goal has always been to share the best of what our Island has to offer\u2014in accommodations, recreation, golf, shopping and dining. Allen gets that; he expresses exactly the same idea with his food.\u201d<\/p>\n<\/p>\n
